Exploring Food and Fun
Since its opening in 2013, the Tom Hanafan River’s Edge Park has evolved into one of Council Bluffs’ most prominent destinations. It features an event center pavilion, an engaging playground, and a sprawling greenspace. It's the perfect place for family fun, scenic views, or city events.
I started my evening off by spending some time exploring all that River’s Edge Park has to offer. I sat on the benches atop the River’s Edge Pavilion to get an expansive view of the park and riverfront. I also observed some children playing at Belles' Play Garden on the park’s giant pelican-shaped play area and running through the surrounding sprinklers. From there, I took a walk over the Bob Kerrey Pedestrian Bridge to explore the Omaha Riverfront and walk to the Gene Leahy Mall. On this particular day, the Gene Leahy Mall was hosting a College World Series kickoff party that featured food trucks, live music, and fireworks. There were lots of people in attendance to celebrate the commencement of one of Omaha’s most popular events.
After coming back over the bridge to the Council Bluffs riverfront, I stopped for dinner at a nearby restaurant, Mercy Thai. I had never had Thai food before, so this was definitely a new experience. I ordered the so moo swa (wonton wrappers stuffed with beef, onions, and potatoes) and the coconut curry noodles with chicken (you can choose your own spice level!). I really enjoyed both dishes and highly recommend trying this restaurant!
My night ended by returning to River’s Edge Park and sitting on top of the pavilion building to watch the fireworks from the CWS event. Watching the fireworks from here was a way to avoid the crowds while also seeing all the cool colors and designs from the open-air rooftop. River’s Edge Park is a great place to enjoy the outdoors in a variety of ways.
